Portuguese Duck Rice Recipe

In the middle of the table, you'll create a splash of color with this platter! Beautiful golden rice, almost toasted and crunchy, to make your friends love duck!

1Kg Rice
1 Duck with Giblets
1 Carrot
1 Onion
2 Garlic Cloves
1 Pepperoni Sausage
1 Piece of Bacon
1 Bay Leaf
2 Egg Yolks
 Black Pepper
 Olive Oil


1. Fill a pan with water and put the duck to cook with a carrot, an onion, two cloves of garlic, a pepperoni sausage, bacon, a bay leaf, salt, and olive oil. Until the duck is cooked.

2. Once cooked, remove the duck and grind all the cooking until making a broth with a magic wand, previously removing the bay leaf.

3. After cooling, you have to shred the duck and fry the giblets by breaking them into small pieces.

4. Place the rice to be cooked in the duck broth and check that the seasoning is correct, if necessary, add salt.

5. With the cooked rice, it is necessary to proceed to the assembly of the platter. Create a base of rice, stuff it with the shredded duck and the fried giblets, and add rice again.

6. Before taking it to the oven, brush the rice with the egg yolks and cover with bacon and pepperoni sausage.

7. Place in the oven at 180 Celsius degrees | 356 Fahrenheit degrees until it turns a golden color.
