Ingredients:

2 Cups All-Purpose Flour (220g)
½ tsp Baking Soda
¼ tsp Sea Salt
½ Cup Melted Butter (125g)
½ Cup Granulated Sugar (100g)
½ Cup Dark Brown Sugar (100g)
1 Large Egg
1 tsp Vanilla Extract
½ Cup Walnuts (60g)
½ Cup Skinless Almonds (60g)
½ Cup Appricot (70g)

Recipe:

1. Preheat the oven to 180ºC | 360ºF.

2. In a stand mixer add the two sugars and the melted butter and mix everything until you get a homogeneous dough.

3. Then add the egg, slightly beaten, and the vanilla extract.

4. Add the flour and baking soda and beat for 4 minutes.

5. Meanwhile, chop the walnuts, almonds, and apricots roughly and finally add to the mixture.

6. Add salt and beat again for another 1 min.

7. In a tray with parchment paper, place portions of the dough well-spaced and bake in the oven for 15-20min.

8. Let it cool down a bit and let’s attack these cookies!
