This is a super easy and delicious recipe to make on a Sunday lunch!

Ingredients - 2 Drinks:

200g Salmon
½ Avocado
¼ Purple Onion
½ Lemon Juice
1 tbsp Parsley
1 Orange
2 Wrap Bread
Black Pepper
Salt

Recipe:

1. Place the Wrap Bread in two bowls and take it to the oven for 20 minutes at 180ºC | 360ºF - These will be our ceviche bowls.

2. Cut the salmon fillet into equal cubes and add it to a large bowl.

3. Cut the avocado into cubes and add to the salmon, along with the juice of half a lemon, salt, and black pepper.

4. Slice the onion very finely and add to the prepared and break the orange into cubes to add.

5. Add the parsley and stir everything well and let it rest for 5 min.

6. Remove the wraps from the oven and let them cool! Then just plate!

Ingredients:

2 Cups All-Purpose Flour (220g)
½ tsp Baking Soda
¼ tsp Sea Salt
½ Cup Melted Butter (125g)
½ Cup Granulated Sugar (100g)
½ Cup Dark Brown Sugar (100g)
1 Large Egg
1 tsp Vanilla Extract
½ Cup Walnuts (60g)
½ Cup Skinless Almonds (60g)
½ Cup Appricot (70g)

Recipe:

1. Preheat the oven to 180ºC | 360ºF.

2. In a stand mixer add the two sugars and the melted butter and mix everything until you get a homogeneous dough.

3. Then add the egg, slightly beaten, and the vanilla extract.

4. Add the flour and baking soda and beat for 4 minutes.

5. Meanwhile, chop the walnuts, almonds, and apricots roughly and finally add to the mixture.

6. Add salt and beat again for another 1 min.

7. In a tray with parchment paper, place portions of the dough well-spaced and bake in the oven for 15-20min.

8. Let it cool down a bit and let’s attack these cookies!

This is sweet, this is fresh, this screams summer nights at the beach! 😍

Caipirinha Recipe - The2Planners

Ingredients - 2 Drinks:

 Crushed Ice
1 Lime
2 Shots Cachaça (60mL)
1 tsp Light Brown Sugar
2 Mint Leaves

Recipe:

1. First, let's break the ice. 🤣  If possible you can buy already crushed ice.

2. In a shaker add the tsp of light brown sugar, the cachaça, and the lime (sliced into 8 pieces).

3. With a pestle, crush the lime slices, mixing everything very well.

4. Add the mint leaves and then the crushed ice.

5. Shake everything very well in the shaker and there you go! You now have 2 caipirinhas ready to serve!

Stewed Peas with Poached Eggs Recipe - The2Planners

Ingredients:

600g Peas
4 Carrots
4 Eggs
1 Onion
6 Tomatoes
2 Chorizos
2 Spicy Sausages
2 bay Leaves
50mL White Wine
Olive Oil
Salt
Black Pepper

Recipe:

1. In a pan, place the olive oil, salt, black pepper, and bay leaves over high heat.

2. Add the chopped onion and let it simmer for 3 minutes.

3. Then add the white wine and stir.

4. When boiling, add the tomatoes and cover the pan for 7-10 minutes, until the tomatoes make a sauce.

5. Cut the carrots into pieces and add them to the pan.

6. While everything is cooking, remove the skin from the spicy sausages and the chorizos and cut them into pieces. Add them to the pan together with the peas and cover to sauté everything.

7. After 10 minutes, add the 4 whole eggs, turn off the stove, cover the pan and let it rest for 5 minutes.

8. And this divine dinner is ready!

Key Lime Pie Recipe - The2Planners

Ingredients - Dough:

200g Wheat Flour
100g Unsalted Butter (broken into pieces)
1 Egg
1 teaspoon salt
3 tbsp Sugar

Recipe - Dough:

1. Preheat the oven to 180ºC | 360ºF.

2. Add the flour, sugar, and salt to the bowl of an electric mixer and mix everything together.

3. Add the egg and butter, cold and cut into small pieces, and mix until uniform.

4. Add the flour and continue to mix until a crumbly dough is left. Do not knead too much so that the dough is not hard.

5. Make a ball with the dough, sprinkle the counter with flour, and roll out the dough.

6. Put the dough in the shape of a pie, put it well, and remove the excess dough with a knife.

7. Bake for 10 minutes at 165ºC | 330ºF.

Ingredients - Cream:

200mL Condensed Milk
5 Limes (squizzed juice)
1 Lime (zest)
5 Egg Yolks
3 tbsp Sugar

Recipe - Cream:

1. In a bowl, mix the condensed milk, egg yolks, sugar, and lime juice and zest very well.

2. Pour the cream over the dough base, that you took from the oven.

3. And bake again for 25 minutes at 180ºC | 360ºF..

4. Remove from the oven and allow it to cool down.

5. Then, place in the refrigerator.

Ingredients - Whipped Cream:

200mL Cream
1½ tbsp Granulated Sugar

Recipe - Whipped Cream:

1. Whip the whipped cream with the sugar.

2. When serving, unmold the pie and place the cream on top.

3. You are ready to eat.

Brownie Strawberry Trifle Recipe

Brownie Strawberry Trifle Recipe - The2Planners

Ingredients - Brownie:

110g Butter
2 Small Eggs
100g White Sugar
100g Brown Sugar
40g Cocoa Powder
 60g Flour 
1 tsp Vanilla Flavor
1tsp Expresso Coffee
125g Chocolate Chunks
Pinch of Salt

Recipe - Brownie:

1. Add the melted butter, eggs, coffee, and vanilla to a large bowl and whisk them together. 

2. Add the white and brown sugars to the mixture and whisk the mixture together until it’s smooth.

3. Sift in the flour, salt, and cocoa powder, and stir until everything is incorporated.

4. Chop the chocolate tablet into medium-sized chunks.

5. Fold in the chocolate chunks.

6. Transfer the batter to a parchment-lined baking dish.

7. Bake at 180ºC | 356ºF for about 30 minutes.

Ingredients - Creamcheese:

175g Philadelphia
200mL Cream
1tsp Vanilla Flavor
5tbsp Powdered Sugar

Recipe - Creamcheese:

1. Add the cream cheese, sugar, vanilla flavor, and cream (it should be cold) in a large bowl.

2. Whisk until it gets creamy.

3. Reserve in the cold.

Ingredients - Strawberries:

 10 Strawberries
2 tbsp Granulated Sugar

Recipe - Strawberries:

1. Cut the 10 strawberries into coarse pieces.

2. Add 2 tbsp of granulated sugar and let it stand for 30 minutes.

3. It is time to install the parfait. The recipe should be served in individual glasses.

4. Start by roughly undoing pieces of chocolate brownie with your hands until they cover the bottom of the glass.

5. Add the strawberries until you have a new, well-composed layer.

6. Finally, add the cream cheese and garnish with two pieces of strawberry.

7. Reserve in the cold and you're ready to eat.

100g Portuguese Biscuits (or any kind of biscuit/cookies you like)

Recipe:

1. Start by heating the cooked condensed milk in a water bath, put the can of cooked condensed milk in boiling water for about 15-20 minutes.

2. After this time, transfer the condensed milk to a container and whisk until the mixture is silky and free of clumps.

3. Separate the egg whites from the yolks. Add the egg yolks to the condensed milk and mix.

4. Whisk the egg whites stiff.

5. Wrap the egg whites carefully with the mixture of egg yolks and condensed milk, do not remove the air from the egg whites (do it 3 times, to make it easier to incorporate, very slowly).

6. Grate half a packet of Portuguese biscuits (or another kind you like) and place on top of the mixture. Take to the refrigerator for at least 6 hours, and serve very cold.

7. This is so good! 🥰
