Salted Caramel (Toffee) Cheesecake Recipe

Do you remember trying those caramel sweets we ate when we were young? This is the memory that this cheesecake brings to me (Richie)!

Those were good times, I always had uncles that used to bring in their pockets this kind of candy!

You have to try this delicious cheesecake! 

Salted Caramel (Toffee) Cheesecake Recipe - the2planners

Ingredients - Salted Caramel:

240g Granulated Sugar
250mL Cream
40g Butter
 ½ tsp Salt

Ingredients - Cheesecake:

150g Digestive Wafer (or oat cookies)
70g Butter
270g Cream Cheese
250ml Cream
3 sheets of gelatin
½ tsp vanilla flavor

Recipe - Salted Caramel:

1. Combine the sugar with cold water in a medium saucepan set over medium-high heat. Cook, without stirring, until the sugar has turned a deep amber hue.

2. Slowly add in the cream and continue simmering the mixture until it is smooth. Remove from heat, then whisk in the butter and salt, and let it cool.

3. Reserve it.

Recipe - Cheesecake:

1. Mix the crushed wafer/cookies with the melted butter. Place this in a removable ring cake pan by pressing with the help of a spoon. Let it rest in the cold.

2. Beat the cream, and then add the cream cheese and vanilla flavor until creamy. Gradually add half of the salted caramel you made.

3. Hydrate the gelatin sheets in very cold water for 5 minutes. Drain excess water and microwave for about 10 seconds, until dissolved. Add to the previous mixture.

4. Pour the cheesecake mix over the biscuit base and refrigerate for at least 4-6 hours.

5. Add the salted caramel on top of the cheesecake.
