Biscoito Teixeira - Lemon and Cinnamon Biscuit Recipe - The2planners

Ingredients:

500g Granulated Sugar
500g Flour
2 Eggs
2 Cups Warm Water
1 tsp Baking Soda
 1 Lemon Zest
 2 tbsp Cinnamon
 Parchment Paper

Recipe:

1. Turn on the oven at 180ºC | 356ºF.

2. Add the sugar and the two eggs and beat until a paste is created.

3. Then add the warm water and the sifted flour to the mixture, alternating gradually.

4. Complete the mixture by adding the remaining ingredients to the preparation.

5. Put the parchment paper in a rectangular pan and pour the mixture into it.

6. Bake for about 40min.

7. Unmold and slice the cake into cubs.

Are you a cheese lover? This recipe is super simple and mindblowing at the same time!

3 Cheese Fondue Recipe - The2Planners

Ingredients:

140g Mozzarella Cheese
110g Gruyere Cheese
250g Emmental Cheese
1 tbsp Garlic Powder
1 tsp Black Pepper
1 tsp Nutmeg
1 tbsp Corn Starch
200mL White Wine
400g Potatoes (+ salt)
3 slices of bread
2 Steaks (+ salt)

Recipe:

1. First we have to grate the cheeses.

2. Season the potatoes, already cut and washed, with salt, and put in the oven for 20min at 180ºC | 356ºF.

3. In a pan add the garlic powder, black pepper, nutmeg, and wine until boiling.

4. When it starts to boil, add the cheeses gradually, letting them melt.

5. Put the stove on low heat and add the cornstarch and stir for 3 minutes.

6. Meanwhile season the steaks with salt and grill them, then dice them into cubs.

7. Toast slices of bread and break them into pieces.

8. Arrange the potatoes, steaks, and bread on a platter.

9. You can pour the cheese into a fondue machine to keep it warm or eat from the pan, heating every 10 minutes.

10. A great appetizer to start a night with friends at home! 🥰

Chocolate Zucchini Cake Recipe

It looks burned, but it is not! This is a very moist chocolate temptation!

This is the moistest chocolate cake we ever tried! It's super-rich in flavor and will win everyone at the table!

Ingredients:

4 Eggs
650g Zucchini
350g Granulated Sugar
30g Light Brown Sugar
⅓ Cup Coconut Oil
1 tsp Vanilla Flavor
250g Flour
2 tsp Baking Soda
1tsp Baking Powder
75g Cocoa Powder (+ to grease the pan)
½ tbsp Espresso Powder
 Butter (to grease the pan)

Recipe:

1. Preheat the oven at 180ºC | 356ºF.

2. Grate the Zucchini.

3. Place the Zucchini in a wide bowl, and add the sugars, eggs and beat well. Add the vanilla, coffee, coconut oil and beat well for a few minutes.

4. Add the sifted flour, cocoa powder, baking soda, baking powder and mix well until a homogeneous mixture is obtained.

5. Grease a cake pan with butter and then with cocoa powder.

6. Bake for about 50 min.

Pavlova with Sweet Egg Cream Recipe

This is our second time making Pavlova! Oh boy! We nailed it!

This was heaven on earth! Sweet Egg Cream is a very traditional Portuguese delicacy! So we thought about combining it with this fresh Pavlova! 

We made this recipe at Christmas, and it was the "best-seller" of the Christmas Desserts! 🤣 🤣 🤣

Pavlova with Sweet Egg Cream Recipe - The2Planners

Ingredients:

6 Egg Whites
300g Granulated Sugar
2 tbsp White Wine Vinegar
2 tbsp Cornstarch
1 tsp Vanilla

Ingredients - Whipped Cream:

400mL cream (to whip)
3 tbsp Sugar

Ingredients - Sweet Egg Cream:

6 Egg Yolks
6 tbsp Sugar
6 tbsp Water

Recipe:

1. Preheat oven to 150ºC | 300ºF.

2. Using a pencil, mark out a circumference on parchment paper on an oven tray.

3. In a large bowl, beat the egg whites for a few seconds. Gradually add the sugar, 1 tablespoon at a time, with the mixer on. Beat until thick and glossy, until the sugar is completely dissolved (it will take about 10-15min).

4. Whisk the white wine vinegar, with the cornflour and the vanilla extract.

5. Add this mixture to the meringue, that you previously made.

6. On the circumference that you made on the parchment paper, spread the meringue inside the circle, creating a crater by making the sides a little higher than the middle.

7. Put the pavlova in the oven and reduce the temperature to 130ºC | 266ºF. Bake for 1 hour, then turn off the heat and let the Pavlova cool completely inside the oven (for at least 6 hours).

Topping - Sweet Egg Cream:

1. Combine the sugar with cold water in a saucepan set over medium-high heat. Cook, without stirring, until the sugar has turned 108ºC.

2. Temper the eggs, by slowly adding a few tbsp of the sugar sauce to the egg yolks and mix until smooth. 

3. Transfer again to the saucepan over medium heat, until the eggs thicken.

4. Remove from heat, let it cool, and reserve.

Topping - Whipped Cream:

1. A few minutes before you serve, pour the whipping cream into the mixing bowl, gradually add the sugar, and whisk at high speed until stiff peaks form.

2. Add the whipped cream to the crater of the merengue

3. Put the sweet egg cream on top of the whipped cream.

We do this recipe every time on New Years Eve! It is fun and delicious!

Ingredients:

 2Kg King Prawns
 3 Garlic Cloves
½ Cup Olive Oil (125mL)
1 tsp Salt
1 tbsp Hot Sauce
1tbsp Black Pepper
150mL Whiskey (30ml x 5 - shot glass)
Olive Oil

Recipe:

1. You can use frozen or fresh shrimp.

2. We chose frozen shrimp and allowed it to thaw for 2 hours.

3. After thawing slightly, we remove the legs and body of the shrimp. Leaving the head and tail.

4. Next, place the shrimp in a bowl with the finely chopped garlic, oil, hot sauce, salt, and black pepper.

5. Let marinate for 1 hour.

6. In a frying pan, place a drizzle of olive oil and a portion of the shrimp, after 3 minutes turn the shrimp over and wait again for 3 minutes.

7. Add a shot glass of whiskey to flambe the prawns.

8. Repeat this process until the prawns are all ready!

9. At the end, enjoy the sauce left in the pan to pour over the prawns!

10. This is THE real delicacy!

250g Mascarpone Cheese
200mL Cream
250-300g Biscuits la Reine
300mL Instant Coffee + 6tbsp Granulated Sugar
3 Egg Yolks
50g Sugar

Recipe:

1. Beat the sugar with the egg yolks in a water bath for a few minutes until it thickens and becomes much lighter. Let it cool for a bit.

2. Beat the mascarpone cheese with the cream (both should be very cold) until it becomes a consistent cream. Join it with the previous egg cream you made.

3. Make 300mL of strong dark instant coffee and add 6 tbsp of granulated sugar.

4. In a medium container, place a layer of La Reine Biscuits soaked in the coffee syrup, cover with half the cream, make a new layer of biscuits soaked in coffee and finish with the rest of the cream. Refrigerate at least 4 hours

5. Before serving, sprinkle with cocoa powder, and boom, you made magic!

Salted Caramel (Toffee) Cheesecake Recipe

Do you remember trying those caramel sweets we ate when we were young? This is the memory that this cheesecake brings to me (Richie)!

Those were good times, I always had uncles that used to bring in their pockets this kind of candy!

You have to try this delicious cheesecake! 

Salted Caramel (Toffee) Cheesecake Recipe - the2planners

Ingredients - Salted Caramel:

240g Granulated Sugar
250mL Cream
40g Butter
 ½ tsp Salt

Ingredients - Cheesecake:

150g Digestive Wafer (or oat cookies)
70g Butter
270g Cream Cheese
250ml Cream
3 sheets of gelatin
½ tsp vanilla flavor

Recipe - Salted Caramel:

1. Combine the sugar with cold water in a medium saucepan set over medium-high heat. Cook, without stirring, until the sugar has turned a deep amber hue.

2. Slowly add in the cream and continue simmering the mixture until it is smooth. Remove from heat, then whisk in the butter and salt, and let it cool.

3. Reserve it.

Recipe - Cheesecake:

1. Mix the crushed wafer/cookies with the melted butter. Place this in a removable ring cake pan by pressing with the help of a spoon. Let it rest in the cold.

2. Beat the cream, and then add the cream cheese and vanilla flavor until creamy. Gradually add half of the salted caramel you made.

3. Hydrate the gelatin sheets in very cold water for 5 minutes. Drain excess water and microwave for about 10 seconds, until dissolved. Add to the previous mixture.

4. Pour the cheesecake mix over the biscuit base and refrigerate for at least 4-6 hours.

5. Add the salted caramel on top of the cheesecake.
