Cod with Cornbread Crust Recipe

So, it's Christmas time, we are in Portugal, we eat a lot of fish, so it's one more recipe of Codfish! 

With bread and potatoes! Soooo, no carbs! Right?

Hope you like this simple, yet delicious, recipe!

Ingredients:

500g shredded cod
500g Portuguese Cornbread
1kg Small Potatoes
400g Spinach
2 onions
Olive Oil
White Wine Vinegar
Tomato Pulp
Black Pepper
Salt

Recipe:

1. Wash the potatoes and cut them in half, without peeling their skin.

2. In a pan with boiling water, place the potatoes with salt and boil for 8 minutes.

3. In a frying pan place the spinach with salt, black pepper, white wine vinegar, and olive oil to sauté.

4. Put two chopped onions in a pan, salt, black pepper, tomato pulp, and olive oil. Bring to the heat and let it cook for 4min. Then place the shredded cod and let it cook for 8 minutes.

5. Brush an oven tray with olive oil and then place the potatoes previously slightly cooked, then place the spinach and then the cod.

6. With your hands create crumbs from the Cornbread and place them on top of the cod, brushing again with olive oil.

7. Bake for 30 minutes in the oven at 180ºC | 356ºF or until the bread begins to toast.

8. Good Appetite!
