Rosemary Focaccia Bread Recipe

An Italian delicacy! To eat plain or with some amazing dips! Amaze your friends and family!

Did we tell you that we love Italy? 😂 😂 😂 You are not reading our blog! 😂 😂 😂  When we went to Italy we had an amazing Tomato Focaccia Bread with Passion Fruit Lemonade! And now was our time to do something to try bringing the Italian spirit back to our house!

We made this amazing Rosemary Focaccia Bread, is super easy to make, and while you wait for the rising of your focaccia you can always enjoy a nice glass of Aperol Spritz!

Don't forget to have fun in the kitchen! If you do, you'll have even more fun while eating!

Rosemary Focaccia Bread Recipe - The2Planners

Ingredients:

1 tsp Granulated Sugar
5g Bakers Yeast (or 15g Fresh Bakers Yeast)
1 ½ Cups Warm Water (not hot water)
3 Cups Wheat Flour
2 tsp Salt (Sea Salt)
¼ Cup Olive Oil + 3 tbsp Olive Oil
¼ Cup Rosemary Leaves

Recipe:

1. In a bowl, place the sugar, baker's yeast, and ¼ cup of warm water. Give it a little mix with a fork and let it sit for about 10min.

2. In another container put the flour, ¼ cup of olive oil, and the remaining water (1 + ¼ cups), and start kneading.

3. Add the preparation from Point 1 to your dough.

4. Knead for 2 min without stopping, add 1 tsp of salt and knead for another 1min.

5. In a new container place 1 tbsp of olive oil and add the dough, covering it with a cloth and letting it rise for 1h in a warm environment at about 30ºC | 86ºF.

6. After 1h, transfer the dough to a tray, previously greased with 1 tbsp of olive oil, and spread the dough, leaving the dough 1cm | 0.39in high.

          Note: The 2nd time we did this recipe, we put first in the tray a baking paper, it helps when removing it. 

7. Press the dough with your fingers and drizzle It with 1 tbsp of olive oil. Cover with a cloth and let rise again for another 40min.

8. After leavening, distribute the rosemary leaves and 1 tsp of salt.

9. Bake for 20min at 200ºC | 392ºF

10. Cut the Focaccia into large pieces and make dipping sauces to accompany.

2 - Grated and refined chorizo ​​and sausage;
3 - Pesto with olive oil;
4 - Olive oil with balsamic vinegar;

Aperol Spritz Drink Recipe - The2Planners

Ingredients:

Half the Glass Size of Aperol Spritz
Half the Glass Size of Sparkling Wine Cinzano Pro Spiritz
1 tbsp Sparkling Water
1 Orange Slice
2 Green Olives (Our little twist)
 3 Ice Cubes

Recipe:

1. In a glass, add ice, half the glass of Aperol, and then the Sparkling Wine.

2. Add a splash of sparkling water.

3. Add the orange slice and the 2 green olives.

4. You are ready to go! Feel the Italian energy!

If you ever go to Aveiro, in downtown, you have to go to Un Poco Loco Restaurant! This is a stop you need to make! This restaurant has the flavors on point and knows what they are doing! And don't get me started on those margaritas!

· For Appetizers, we order nachos ( ai, ai, aiiiii), Nachos - Totopos with Melted Cheese and Jalapeños.
          Review: This was the best dish of the entire meal (Margaritas aside)! I would go every weekend to Aveiro, just to eat this appetizer! They are hot, the cheese is melted in the oven, and the Jalapeños just adds the right amount of spice! I have to stop! My belly is begging again for this!

· For Main Dish, we ordered two dishes for both of us to try on, Poco Loco Tacos - Veal Sirloin, Tortilla, Cheese, Caramelized Onion in Tequila, Onion Pickle and Chipotle Salsa. Accompanied by Lettuce Salad and we also ordered Tacos Paquito, Chicken, Tortilla, Lettuce, Salsa Roja, and "Salsa" Verde
          Review: The Poco Loco Tacos, was sweet and juicy, lots of flavors there, and the Tacos Paquito had a strong flavor of chili and coriander. Both of them are really good, and it's just enough for two people!

· For Dessert, we shared a Tres Leches Cake.
          Review:
It's good, it's a Tres Leches Cake, simple and spot-on. But we should have tried the coffee pannacotta as well.. but regrets make you come back to places like this! 🤭

The restaurant is very cozy, you can feel the Mexican spirit and the candles and saints all around make you feel in the mood!

Ps- I loved the Red neon light on display at the restaurant window!

Ps2 - Richie drank a Margarita Original and Andrew a Margarita Loca (this one was a Passion Fruit Margarita! What a nice and fresh surprise!)

Portuguese Meat or Ham and Cheese Rissoles Recipe - The2Planners

Ingredients - Dough:

1Kg Wheat Flour
1L Water
1 Pinch of Salt
1 Lemon Peel
150g Butter 

Recipe - Dough:

1. Put the water, salt, lemon peel, and butter in a large saucepan until boiling.

2. After boiling the water, put the flour in one go and stir until it forms a dough that comes out of the pan and immediately disconnects from the stove.

3. Form a ball with the dough and let it cool on a stone or fried bench and then, using a rolling pin, form small circles for the patties.

Ingredients - Meat Rissoles:

700g Beef and Chicken
1 Chouriço
1 Onion
50ml Olive Oil
4 tbsp Tomato Pulp
Parsley
Salt
Piri-piri
Eggs
Breadcrumbs 

Recipe - Meat Rissoles:

1. In a pan, stew the beef and chicken with the chorizo, onion, and other spices.

2. After it is well cooked, put the meat in the chopper and grind everything and then fill the patties.

3. Pass the risotto over egg and breadcrumbs, then just fry or freeze.

200g Cheese
100g Ham
Eggs
Breadcrumbs

Recipe - Ham and Cheese Rissoles:

1. Place the cheese and ham in a chopper and grind well to create a paste to fill the patties.

This is a very traditional recipe from Madeira Island, Portugal. This is an amazing recipe of bread, but if you ever go to Madeira Island you have to try the traditional one with sweet potato and with Poncha Cocktail!

Ingredients:

1Kg Wheat Flour
5g Bakers Yeast (or 15g Fresh Bakers Yeast)
1 tbsp Sugar
1L Warm Water
1 tbsp Salt

Recipe:

1. In a large bowl, place the sugar and flour.

2. In a cup, place the baker's yeast and hydrate it with 100ml of warm water (do not add hot water).

3. In the bowl with the sugar and flour preparation, add the yeast and half of the remaining water from the liter of warm water.

4. Knead the dough and add warm water until you get a lump-free consistency.

5. The dough has to be sticky and has to create air bubbles, only then will you know that it is perfectly kneaded.

6. Then add a light layer of flour over the dough, cover the bowl with a cloth and let it rise for 1 hour.

7. After 1h, put flour on a marble board or on a counter and start to divide the dough into small balls of dough, adding flour whenever necessary to stop gluing to your hands and the marble board or counter. Kneading for about 7 / 10min.

8. After making the balls, flatten them with the back of your hand and let them rise for another 30 minutes.

9. In a frying pan over medium heat, place a loaf of bread for 5 minutes and turn it over after gaining a color. Repeating the process on the other side.

10. And they are ready! 🥰 Delicious loaves of bread to eat with a good garlic butter or a big juicy burger!

Portuguese Fried Codfish with Purée Recipe

A treat to make in the oven, a traditional flavor, and with a smell of fresh peppers!

Codfish is very traditional in Portugal, so we do a lot of dishes with it! If you ever come to Portugal you can try it on almost every side of the country, in numerous ways!

Portuguese Fried Codfish with Purée Recipe - The2Planners

Ingredients:

4 Codfish Slices
4 Onions
1Kg Potatoes
1 Green Pepper
1 Red Pepper 
 4 Black Olives
2 Bay Leaves
2 Cups Flour
1 Egg Yolk
1 tbsp Butter
Tomato pulp
Piri-piri
Oil to Fry 
Olive Oil
Salt

Recipe:

1. In a pan place the potatoes to be cooked with salt.

2. After cooking, remove the water, add the butter, milk, and egg yolk, and beat everything with an electric mixer to form a purée.

3. In a pan, place the four sliced onions to be sautéed with half the green and half the red pepper, diced, adding salt, olive oil, p, piri-piri, bay leaf, and tomato pulp.

4. Pass the four pieces of cod for flour and fry in very hot oil.

5. Next we are going to plate. On a platter, distribute the onion on the first base, followed by the cod slices and finally the puree.

6. To mark the location of the slices, you can add slices of pepper and olives to decorate.

7. Take to the oven for 15min at 180 Celsius degrees | 356 Fahrenheit degrees.

Rabanadas - Portuguese French Toast Christmas Recipe

So it is time to start doing some Christmas desserts and start feeling the Christmas spirit! 🎄

They are beautiful to look at and delicious to eat! There is no Christmas table without french toast! So here it is the recipe you could not miss. Freshly made is a delight, the next day, perdition.

Rabanadas - Portuguese French Toast Christmas Recipe - The2Planners

Ingredients:

1 Loaf of Bread for French Toast
4 Eggs
1L Milk
6 tbsp Spoons
1 Lemon Peel
1 Cinnamon Stick
Sugar
Cinnamon
Oil to Fry

Recipe:

1. Cut the bread into slices and let it dry overnight.

2. In a saucepan, place the milk to be heated together with the sugar, the lemon peel, and the cinnamon stick.

3. Prepare four deep dishes, one with four beaten eggs, one with the boiled seasoned milk, one with sugar and cinnamon, and one last with absorbent paper.

4. Pass the bread through milk, allowing it to absorb a lot.

5. Then pass through the egg and fry until the slices are golden brown.

6. Remove the excess of oil placing it on the plate with absorbent paper and then pass through sugar and cinnamon.

7. With a glass of port wine they are ready to be eaten!
