Yogurt Cake Recipe

This cake is so fluffy! It is very good to eat with tea or for a breakfast with some orange juice!

We like to do this recipe with coconut yogurt! But here I'll let you choose the flavor! You can add strawberry, banana, lemon, blueberries, etc... It will give a small hint of fruit in the cake, and I hope you will love it as much as we do! Give it a try! 

Yoghurt cake - The 2 Planners

Ingredients:

1 Cup Yogurt (any flavor you like)
1 Cup Sunflower Oil (or Vegetable Oil)
4 Cups Flour
4 Cups Granulated Sugar 
5 Eggs
1 tsp Baking Powder
Butter to Grease

Recipe:

1. Turn on the oven at 180 Celsius degrees | 356 Fahrenheit degrees.

2. Separate the egg yolks from the whites and whisk the egg whites.

3. Beat the egg yolks with the sugar, after obtaining a homogeneous mixture add the oil, yogurt, flour, and baking powder.

4. After everything is well mixed, blend in the whisked egg whites in the mixture with the help of a wooden spoon.

5. Grease a circular shape pan with a hole in the center with butter.

6. Distribute the mixture to the pan and bake for about 40min.

Homemade Peanut Butter and Hazelnut Butter Recipe

You can try this recipe with any kind of nuts! Today we are going to make Peanut and Hazelnut Butter

If you love nuts as much as we! This is your recipe! In Portugal this kind of butter is really expensive! So we make our own, and for me (Richie) it tastes even better! You can eat it with cookies, on bread, put it on a dessert! You name it! This is a super versatile recipe than anyone can make! Let's give it a try! 

Homemade Peanut Butter and Hazelnut Butter - the2planners

Ingredients - Peanut Butter:

2.5 Cups Peanuts (350g)
¼ Cup Olive Oil
Salt 

Ingredients - Hazelnut Butter:

2.5 Cups Hazelnuts (350g)
⅓ Cup Olive Oil
Salt 

Recipe:

1. Turn on the oven at 180 Celsius degrees | 356 Fahrenheit degrees.

2. Place the nuts in an oven tray and put them in the oven for about 20 minutes, until they start toasting! 

3. After that, place the hazelnuts in a fabric towel and rub it, this process with easily pell all the hazelnut skin off in a second.

4. After you remove the hazelnut skin, place them in a food processor and add olive oil, and turn it on at maximum speed for about 15min. Taste it and add a pinch of salt or not! 😉 

5. Do the same thing to do the peanut butter ( or any kind of nuts) but notice that the olive oil amount is deferent, because when toasted the peanuts are more greasy that the hazelnuts, so they don't need as much olive oil. 

6. This is super simple and easy to make! I love eating these kinds of butter with Carob Bread! You should try it.

Ps- You can always add some chunks of nuts to your butter to make it crunchy!

Pesto Puff Pastry Recipe

You can do this with only 3 ingredients! Surprise your friends, with this recipe, at a dinner party!

We are fanatics about Pesto and everything we can do with it! Our Pesto is always homemade and we always like to innovate in flavor and always add something new! As we have to take advantage of all the basil leaves in our mini garden, we always have lots of Pesto here at home!

This recipe is super simple and is so good to eat, it is the perfect entry to a good Italian dinner with friends, and everyone will be amazed by its simplicity and flavor.

Pesto Puff Pastry - The2Planners

Ingredients:

1 Puff Pastry (230 g)
200mL Pesto Sauce - Recipe Here
3 Egg Yolks 

Recipe:

1. Turn on the oven at 180 Celsius degrees | 356 Fahrenheit degrees.

2. Roll out the puff pastry on a bench and cut the sides into strips.

3. Fill the central rectangle with a lot of pesto sauce and start to cover the pesto with the strips, previously cut, in the shape of a braid.

4. After completely closed, whisk two egg yolks and brush the puff pastry with it.

5. Bake until golden/toasted, about 15 minutes in the oven.

Basic Fresh Basil Pesto Recipe

If you have plenty of basil leaves in your garden, this is a basic recipe to do an amazing Pesto!

This recipe can be saved in the fridge for up to 6 months, so its a great way to store your basil, this way it won't get ruin in the garden! I always like to have some pesto in the house! You can do lots of things with it, some salad, pasta or even pastries! Let's give it a try!

Basic Fresh Basil Pesto - The2Planners

Ingredients:

80g Peanuts (½ Cup) - or any kind of nuts that you enjoy
 34g Basil Leaves (2 Cups)
 1 Clove of Garlic
 60mL Olive Oil (¼ Cup)
 70g Pecorino or Parmigiano cheese (1 Cup)
 Salt

Recipe:

1. In a food processor place the peanuts and basil leaves.

2. Then, add olive oil, garlic, and cheese.

3. Taste it and add salt if you like.

4. Say with me: This was super easy!

Pastel de Nata Pie Recipe

Once in Portugal, you have to try a Pastel de Nata, a very small pastry with two main ingredients:

Under the image, you'll find the complete recipe and a funny video we made during the quarantine in Portugal! This Pie is super super easy to make, and I can tell you, it's so delicious, I love to cut a slice and sprinkle it with cinnamon powder! Give it a try! 😉

Ingredients:

500mL Milk
50g Cornstarch Flour
250g Granulated Sugar
6 Egg Yolks
1 Shortcrust Pastry

Recipe:

1. Turn on the oven at 180 Celsius degrees | 356 Fahrenheit degrees.

2. Pour the milk in a saucepan and when it becomes warm add the cornstarch flour so that it doesn't create lumps.

3. Turn off the stove, let it cool a little, and add the sugar and 6 egg yolks. In this way, the egg yolks won't cook with heat.

4. Stir well and return to the stove, stirring constantly until it thickens.

5. Roll out the shortcrust pastry in a pie pan and pour the filling into the shortcrust pastry

6. Bake until dark spots are obtained, about 25 to 30 minutes.

Portuguese Seafood Rice Recipe

A traditional recipe that will make you travel to Portugal through its amazing flavor!

In a lovely Saturday night dinner, the best is to stay at home and make a delicious Portuguese Seafood Rice dish, this will warm up your soul!

Portuguese Seafood Rice - The2Planners

Ingredients:

300g Shrimp
300g Mussels
300g Clams
200g Rice
 0.5dL Water
1 Onion
6 Kani-kama
2 tbsp Seafood Soup Powder
Olive oil
Chopped parsley
Chili
Salt

Recipe:

1. In a pan place the whole seafood accompanied by a chopped onion, with a drizzle of olive oil, salt, parsley, and chili.

2. After well-seasoned add the two tablespoons of Seafood Soup Powder and stir well to create a cream.

3. Then, add water and wait 10 minutes.

4. With the water boiling, add the rice and cook for 15 minutes, to be cooked perfectly.

5. Pour the sliced Kani-kama and serve on a platter. I love to put lots of fresh parsley.

Where to go? What to see? What to eat?  How to travel between places? In this city guide, we present you the route we did in the Summer of 2019, a trip we absolutely loved and think its a must for young couples.

Italy has an extensive and modern network of trains, so all the dislocations between cities were made that way, making it a funny and very cheap way to discover the country. 

Italy Map - 8 days, 6 cities: Milan, Cinque Terre, Pisa, Florence, Verona, and Venice!

Our journey started in Milan, we arrived at the airport (Bergamo AirportMilan) early in the morning (day 1) and slept that night in Milan, the next morning we woke up and got straight to the train station (day 2), DESTINATION: Cinque Terre! Cinque Terre is so romantic! 😍  We spent 2 days in Cinque Terre, visiting all five towns and at night we would walk freely by the city La Spezia. After those 2 nights, we woke up at 7am and crossed the street to get on the train to Pisa (Day 4). Pisa was just a small stop, we got to know the city in just one morning, you'll have plenty enough time, but I think you'll be amazed! Still on the same day, during the afternoon we went to Florence and stayed there two nights. On day 6 we went by train to Verona to visit the city and stayed there sleeping for the last two nights, it's cheaper than staying in Venice and the trip by train is really close, so on day 7 we went from Verona to Venice and came back during the evening to sleep in Verona our last night. On day 8 we left Verona and still manage to visit Lake Garda on our way to the airport! You can now discover all our journeys in the links below! Have fun with us!❣️
